I have a great recipe for Easter cake.

Ingredients:

4 large eggs (L)

200 g of butter

zest and juice of 1 lemon

1 cup of sugar (180 g)

1 tablespoon vanilla sugar (or 1 vanilla pod)

1 cup of plain wheat flour (160 g)

1/2 cup of potato flour (90 g)

1 teaspoon of baking powder

for spreading the mold: 1 tablespoon of butter and about 3 tablespoons of breadcrumbs or ground nuts or almond

on top: powdered sugar or frosting and peeled almonds or ready-made eggs.

Warm the eggs (they beat better) - put them in a bowl, pour over with very warm tap water and set aside for several minutes, if necessary, change the water to warmer.

Prepare a cake pan with a chimney in the center (approx. 22 - 25 cm in diameter), brush it with 1 tablespoon of butter and sprinkle with breadcrumbs or ground nuts or almonds. Preheat the oven to 170 degrees C (top and bottom heating without hot air).

Melt the butter, add lemon juice and lemon zest, set aside.

Place eggs in a larger bowl, add sugar and beat for about 10 minutes until light, thick and fluffy. Meanwhile, add the vanilla sugar or the beans scraped from the halved vanilla pod.

Sift the wheat flour, potato flour and baking powder into the second bowl, mix.

Add the flour mixture to the beaten eggs and mix briefly at low speed of the mixer until the ingredients combine into a homogeneous dough (you can mix with a mixer for a while, then gently mix with a spatula, then mix again).

Pour the butter into the dough and mix until the ingredients combine into a uniform dough. The dough will have a texture similar to pudding. Pour the mass into the prepared form and put it in the oven. Bake for about 45 minutes (until the stick is dry).

After baking, remove and cool. You can bake it the day before and keep it covered.

After cooling, take the cake on a platter and sprinkle with powdered sugar or frost it and cover with peeled almonds or ready-made eggs.

It's nice to hear from you:). You asked me to write a recipe and I chose my favorite dish, naleśniki - it's a polish version of pancakes. It's super easy to make it and I'm pretty sure that you have all ingredients. All you need is a glass of flour, 2 eggs, one glass of milk, some water, and 3 spoons of butter or oil. When you have all ingredients prepared you just mix it and pour it into the pan. After few minutes your naleśniki are ready:)
