Let's start with a simple question - "What is eaten in China?" China's culinary diversity is as great as its land area. Beijing cuisine - this is the cuisine of the northern part of China, which is based on the culinary traditions of two regions: Hebel and Shantug provinces. What's more, Mongolian influences are also clear - most of the day is based on meat, usually fried. The basis of Beijing cuisine is noodles and steamed wheat rolls (with salty or sweet filling), and dishes with the addition of rice are rare.
Shanghai cuisine - this is the cuisine of the eastern part of China, i.e. cities such as Shanghai, Suzhou, Nanjing and Hangzhou. It is characterized by a sweet taste because brown sugar is added to many dishes. The basis of many dishes is fish and seafood. It is worth emphasizing that Shanghai cuisine is a healthy cuisine - dishes are often slowly steamed or simmered.
Cantonese cuisine - this is the cuisine of the southern part of China, i.e. the area of Guangzhou and Hong Kong. It is this type of Chinese cuisine that is best known in Europe. In Cantonese cuisine, most dishes are based on rice and finely chopped ingredients that are fried in a wok. Fish and seafood are also often used. What's more, it is Cantonese cuisine that is characterized by many popular specialties, including dried calamari, shark fin soup, snake soup or hundred-year-old eggs.
Szechuan cuisine - this is the cuisine of Western China, i.e. the areas of Sichuan, Chengdu and Chongqing (famous for the most spicy dishes in the world). Most of the dishes are very spicy and beef-based, often the meat is smoked. About five thousand regional dishes are known here, and the process of frying dishes can take place in several ways (dry, on the move, explosive, in deep fat, extracting aromas, etc.).
